  • 3 cups corn fresh, frozen thawed and drained, or canned well-drained
  • 8 ounces cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • Salt and black pepper to taste
  • jalapeño Optional: seeded and finely minced (for a little kick)

Preparation

  • In a large bowl, whisk together the softened cream cheese, mayonnaise, sour cream, and lime juice until smooth.
  • Add the corn, Monterey Jack cheese, red onion, cilantro, chili powder, cumin, and optional jalapeño to the bowl.
  • Gently mix all the ingredients until they are evenly distributed.
  • Taste the dip and season with salt and black pepper as desired.
  • Cover and refrigerate the dip for at least 30 minutes, or 2-3 hours for best flavor.
  • Before serving, stir the dip again and garnish with cilantro or paprika if desired.
  • Serve with tortilla chips, Fritos, or vegetable sticks.

Notes

For an extra smoky flavor, try using roasted corn. Adjust the amount of jalapeño to your desired spice level. This dip is also great served warm; simply warm in the microwave or oven until heated through, stirring occasionally.
