Ingredients
  

Meat

  • 1.5 lbs ground beef

Vegetables

  • 1 chopped medium onion
  • 2-3 cloves garlic minced

Canned Goods

  • 14.5 oz diced tomatoes undrained
  • 15 oz corn drained
  • 15 oz black beans rinsed and drained
  • 8 oz tomato sauce

Seasonings

  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and black pepper to taste

Topping

  • 2 cups shredded cheddar cheese divided
  • 1 bag OR 3-4 cups frozen tater tots OR prepared mashed potatoes

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, brown ground beef over medium-high heat, then drain excess fat.

Cooking the Filling

  • Add chopped onion to the skillet and cook for about 5 minutes until softened; stir in minced garlic and cook for another minute.
  • Stir in diced tomatoes, corn, black beans, tomato sauce, chili powder, cumin, salt, and pepper.
  • Bring the mixture to a simmer, then reduce heat and cook for 5-7 minutes to meld flavors.

Assembling and Baking

  • Pour the meat mixture into the prepared baking dish and sprinkle with half of the shredded cheddar cheese.
  • Arrange tater tots or spread mashed potatoes evenly over the cheese layer.
  • Top with the remaining shredded cheddar cheese.
  • Bake for 25-35 minutes until golden brown, bubbly, and heated through.
  • Let the casserole rest for 5-10 minutes before serving.

Notes

For a spicier kick, add a pinch of red pepper flakes to the meat mixture. You can also experiment with different cheeses like Monterey Jack or a Mexican blend.
