Classic Comfort Squash Casserole

This classic comfort squash casserole combines tender yellow squash with a creamy, cheesy sauce and a buttery Ritz cracker topping, baked to golden perfection.

  • 2 lbs yellow squash sliced 1/4-inch thick
  • 1/2 cup chopped onion
  • 1/4 cup unsalted butter divided
  • 1 cup sour cream full-fat for richness!
  • 1 cup shredded cheddar cheese plus more for topping if desired
  • 1 large egg lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 condensed cream of mushroom soup (10.75 ounce) can

Topping

  • 1 Ritz crackers sleeve (about 1.5 cups), crushed
  • 2 tablespoons extra butter melted (for cracker topping)

Instructions
 

Preparation

  • Bring lightly salted water to a boil in a large pot, then add the sliced yellow squash and cook until tender-crisp (5-7 minutes). Drain the squash well and set it aside.
  • While the squash cooks, melt 1/4 cup of butter in a skillet over medium heat and sauté the chopped onion for about 5 minutes, until softened and translucent.

Assembly

  • In a large mixing bowl, combine the drained squash, sautéed onion, sour cream, 1 cup shredded cheddar cheese, beaten egg, salt, pepper, and condensed cream of mushroom soup; mix gently until well combined.
  • In a separate small bowl, mix the crushed Ritz crackers with 2 tablespoons of melted butter until the crackers are evenly coated.
  • Pour the squash mixture into a lightly greased 9x13 inch baking dish and spread evenly.
  • Evenly sprinkle the buttery cracker mixture over the squash; optionally, add more shredded cheddar cheese over the crackers.

Baking & Serving

  • Preheat oven to 375°F (190°C) and bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Remove from the oven and let the casserole rest for 5-10 minutes before serving to allow it to set.

Notes

For an extra golden and crispy topping, you can broil the casserole for the last minute or two, watching carefully to prevent burning.
