  • 2 oz Gin classic London dry
  • ¾ oz Fresh Lemon Juice
  • ¾ oz Raspberry Syrup homemade or good quality store-bought
  • ½ oz Dry Vermouth
  • 1 Egg White pasteurized recommended

Garnish

  • Fresh raspberries or a lemon twist

Instructions
 

Preparation

  • Combine gin, fresh lemon juice, raspberry syrup, dry vermouth, and egg white in a cocktail shaker.
  • Dry shake (without ice) vigorously for 30-45 seconds to emulsify the egg white and create foam.
  • Add a generous amount of fresh ice to the shaker and shake again for 15-20 seconds until thoroughly chilled.
  • Double strain the cocktail into a chilled coupe or martini glass.
  • Garnish with fresh raspberries or a lemon twist and serve immediately.

Notes

For the best foam, ensure your egg white is fresh. A double strain helps remove any small ice chips or impurities, resulting in a smoother drink. Adjust the sweetness of the raspberry syrup to your preference.
