  • 1 tbsp olive oil
  • 1 lb lean ground beef 90/10 or leaner
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 zucchini chopped
  • 14.5 ounce diced tomatoes unsalted, undrained
  • 1 cup vegetable or beef broth low sodium
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp paprika
  • red pepper flakes optional
  • Salt and freshly ground black pepper to taste

Preparation

  • Chop the onion, garlic, red bell pepper, green bell pepper, and zucchini.

Cooking

  • Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned, then drain any fat.
  • Add a drizzle of olive oil, chopped onion, and minced garlic to the skillet and cook for 3-5 minutes until the onion softens.
  • Stir in the chopped bell peppers, zucchini, and undrained diced tomatoes.
  • Pour in broth, then add oregano, basil, paprika, and optional red pepper flakes. Bring to a simmer, reduce heat, cover, and cook for 10-15 minutes until vegetables are tender.
  • Remove the lid, simmer for another 5-10 minutes, stirring occasionally, until liquid reduces and sauce thickens slightly.
  • Taste and adjust seasoning with salt and pepper, then serve hot.

Notes

For a spicier kick, increase the amount of red pepper flakes.
Serve with quinoa or brown rice for a more complete meal.
