Classic Cinnamon Roll Protein Bites

Ingredients
  

Protein Bites

  • 1 cup rolled oats quick-cooking or old-fashioned
  • 1 scoop vanilla or unflavored protein powder approx. 30g
  • 1/4 cup almond butter or peanut butter, cashew butter
  • 1/4 cup unsweetened applesauce or mashed banana, pumpkin puree
  • 2 tablespoons maple syrup or honey, agave nectar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Cinnamon Swirl

  • 1 tablespoon cinnamon
  • 1 tablespoon powdered erythritol or other powdered sweetener
  • 1 tablespoon coconut oil, melted or dairy-free butter

Instructions
 

Protein Bites

  • In a medium bowl, combine oats, protein powder, almond butter, applesauce, maple syrup, vanilla extract, and salt. Mix thoroughly to form a thick dough that is firm but not crumbly.
  • Place the dough between two pieces of parchment paper and roll it out into an 8x6 inch rectangle, about 1/4-inch thick.
  • Whisk together cinnamon, powdered erythritol, and melted coconut oil in a small bowl to create a thick paste for the swirl.
  • Remove the top parchment paper from the dough and evenly spread the cinnamon swirl mixture over the surface, leaving a small border free on one long edge.
  • Carefully roll the dough tightly into a log, starting from the long edge opposite the border, using the parchment paper to assist.
  • Wrap the log tightly in parchment paper or plastic wrap and refrigerate for at least 30 minutes to firm up for easier slicing.
  • Once chilled, unwrap the log and slice it into 1/2 to 3/4-inch thick rounds, then arrange and serve.

Notes

For varying sweetness and texture, adjust the type and amount of sweetener. These bites are excellent for meal prep and can be stored in an airtight container in the refrigerator for up to a week. Feel free to experiment with different nut butters to change the flavor profile!
