Classic Cilantro Lime Steak Bowls

Ingredients
  

For the Steak & Marinade

  • 1.5 lbs flank steak or sirloin steak thinly sliced against the grain
  • 1/2 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 3 cloves garlic minced
  • 2 Juice of limes
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and black pepper to taste

For the Base

  • 2 cups cooked rice white, brown, or cauliflower rice for a low-carb option

For the Classic Fiesta Toppings

  • 1/2 cup black beans rinsed
  • 1/2 cup corn canned/frozen
  • 1/4 cup diced red onion
  • 1/4 cup salsa

Garnish

  • Extra fresh cilantro
  • Lime wedges

Instructions
 

Prepare the Steak Marinade

  • In a medium bowl, combine chopped cilantro, olive oil, minced garlic, lime juice, cumin, chili powder, salt, and pepper.

Marinate the Steak

  • Add the thinly sliced steak to the marinade, ensuring it's well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for a deeper flavor.

Cook the Steak

  • Heat a large skillet or grill pan over medium-high heat. Cook marinated steak in batches for 2-3 minutes per side until desired doneness, then let rest for 5 minutes.

Assemble the Bowls

  • Divide the cooked rice among individual serving bowls.

Add Steak & Toppings

  • Arrange the cooked steak slices over the rice, then add black beans, corn, diced red onion, and salsa.

Garnish and Serve

  • Garnish with extra fresh cilantro and a lime wedge before serving.

Notes

For best results, marinate the steak for at least 2 hours.Adjust spice levels to your preference by adding more or less chili powder. You can also customize toppings a with avocado, cheese, or sour cream.
