Ingredients
  

For the Cheesecake Base:

  • 16 oz cream cheese full-fat, softened to room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream cold
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter melted

For Decoration & Festive Flair:

  • green food coloring gel works best
  • holiday sprinkles assorted
  • candy stars small
  • mini chocolate chips
  • pretzel sticks thin

Instructions
 

Crust Preparation

  • Mix graham cracker crumbs and melted butter, then press a thin, firm layer into a parchment-lined 9x13 inch pan. Chill the crust in the fridge for 15-20 minutes to set.

Cheesecake Filling

  • Beat softened cream cheese until smooth, gradually add powdered sugar, then stir in vanilla extract. In a separate bowl, whip cold heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture and add green food coloring until the desired festive color is achieved.

Shape and Chill

  • Spread the green cheesecake mixture evenly over the chilled crust and refrigerate for 4-6 hours or overnight until very firm. Once firm, lift the cheesecake onto a cutting board and cut out triangle shapes resembling Christmas trees using a sharp knife or cookie cutter.

Decorate

  • Gently push a thin pretzel stick into the bottom center of each cheesecake tree to create a trunk. Decorate each tree with assorted holiday sprinkles, mini chocolate chips as ornaments, and place a small candy star on top.

Serve and Store

  • Arrange the decorated Christmas Tree Shaped Cheesecake Bites on a platter and serve cold. Store any leftover cheesecake bites in an airtight container in the refrigerator for up to 2-3 days.
