Pudding Base

  • 1 scoop Chocolate Protein Powder about 30g
  • 1 cup unsweetened almond milk or milk of choice
  • 1 tablespoon unsweetened cocoa powder
  • 1-2 tablespoons chia seeds or 1/2 teaspoon xanthan gum
  • Sweetener optional: Stevia, erythritol, maple syrup, or honey
  • salt Pinch
  • Vanilla extract optional

Preparation

  • In a bowl or blender, combine protein powder, cocoa powder, chia seeds, salt, and optional sweetener. Add xanthan gum with liquid if using.
  • Pour in almond milk; if using xanthan gum, sprinkle it over the liquid and stir or blend immediately to prevent lumps.
  • Blend until smooth with an immersion or regular blender, ensuring no lumps remain; adjust thickness with more milk or xanthan gum/chia seeds.
  • Pour into ramekins or a bowl, cover, and refrigerate for 2-4 hours or overnight to thicken and meld flavors.
  • Serve the chilled and set chocolate protein pudding.

Notes

Adjust sweetener to your taste. For a thicker pudding, use more chia seeds or a very small amount of xanthan gum. You can also experiment with different milk alternatives like soy milk or cow's milk. Best served cold.
