Classic Chipotle Ranch Grilled Chicken Burrito

Ingredients
  

For the Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.25 tsp garlic powder
  • Salt and black pepper to taste

For the Chipotle Ranch Sauce

  • 0.5 cup mayonnaise
  • 0.25 cup sour cream or plain Greek yogurt
  • 2 tbsp prepared ranch dressing
  • 1-2 chipotle peppers in adobo sauce start with 1 for mild, add more for heat, minced
  • 1 tsp adobo sauce from the can
  • 1 tbsp lime juice
  • 0.25 tsp smoked paprika Optional

For Assembling the Burritos

  • 4 large flour tortillas burrito size
  • 1 cup cooked rice white or brown
  • 0.5 cup black beans rinsed and drained
  • 0.5 cup corn fresh, frozen, or canned
  • 0.5 cup shredded Monterey Jack or cheddar cheese
  • Optional toppings shredded lettuce, diced tomatoes, avocado slices, fresh cilantro

Instructions
 

Marinate and Grill the Chicken

  • Pat chicken breasts dry and combine them with olive oil, chili powder, cumin, garlic powder, salt, and pepper in a shallow dish; marinate for 15-30 minutes.
  • Preheat a grill to medium-high heat, cook chicken for 6-8 minutes per side until cooked through, then rest for 5 minutes before dicing or slicing.

Prepare the Chipotle Ranch Sauce

  • Whisk together mayonnaise, sour cream, ranch dressing, minced chipotle peppers, adobo sauce, and lime juice in a small bowl, adding smoked paprika if desired, then taste and adjust seasoning.

Warm the Tortillas

  • Warm flour tortillas briefly in a dry skillet, microwave, or oven to make them pliable.

Assemble the Burritos

  • Lay a warm tortilla flat, spread Chipotle Ranch sauce down the center, then layer with rice, diced chicken, black beans, corn, and shredded cheese.

Fold and Serve

  • Fold in the sides of the tortilla, roll it up tightly from the bottom, and if desired, briefly grill or toast until golden and sealed.
  • Repeat with remaining ingredients and serve immediately with optional toppings.

Notes

For extra flavor, consider marinating the chicken longer, up to 2 hours. If you prefer a spicier sauce, add an extra chipotle pepper or a pinch of cayenne pepper. Customize your burritos with your favorite fillings and toppings.
