  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion chopped
  • 2 carrots peeled and sliced
  • 2 celery stalks sliced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste
  • 2 cups egg noodles
  • 1 cup frozen peas optional
  • Fresh parsley chopped, for garnish (optional)

Instructions

  • Place chicken breasts or thighs in the slow cooker and add chopped onion, sliced carrots, and celery.
  • Pour in chicken broth, then add dried thyme, dried rosemary, bay leaf, salt, and pepper.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked and easily shreddable.
  • Remove and shred the cooked chicken with two forks, discarding the bay leaf.
  • Return the shredded chicken to the slow cooker.
  • Add egg noodles and frozen peas (if using) to the soup.
  • Increase heat to high and cook for 15-20 minutes until noodles are tender.
  • Taste and adjust seasonings as needed.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For extra flavor, you can sauté the vegetables briefly before adding them to the slow cooker. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
