  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

  • 1 cup unsalted butter (2 sticks) softened
  • ½ cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup creamy peanut butter

Preparation

  • Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then add the vanilla extract; scrape down the sides of the bowl before beating in the creamy peanut butter until fully combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined, being careful not to overmix.

Baking

  • Roll the dough into 1.5-inch balls and space them about 2 inches apart on the prepared baking sheets.
  • Flatten each dough ball with a fork in a crisscross pattern.
  • Bake for 8-10 minutes, or until the edges are lightly golden and set, while the centers still appear soft.

Notes

For extra flavor, you can sprinkle a pinch of flaky sea salt on top of the cookies before baking. Ensure your butter is properly softened for a light and fluffy cookie dough texture.
