  • 1 lb Lean Ground Beef
  • 1 Onion, chopped large
  • 2 Garlic, minced cloves
  • 1 ½ cups Long-grain White Rice, uncooked
  • 3 cups Beef Broth
  • 1 Diced Tomatoes, undrained 14.5 oz can
  • 2 tbsp Tomato Paste
  • 1 tbsp Worcestershire Sauce
  • 1 tsp Dried Italian Seasoning
  • Salt to taste
  • Black Pepper to taste
  • 2 cups Shredded Cheddar Cheese
  • 1 tbsp Olive Oil

Cooking Instructions

  • Heat a large skillet or Dutch oven over medium-high heat with olive oil. Add ground beef, break it up, and cook until browned (5-7 minutes), then drain excess grease.
  • Add chopped onion to the skillet and cook until softened (3-4 minutes), then stir in minced garlic and cook for another minute until fragrant.
  • Stir in tomato paste, undrained diced tomatoes, beef broth, Worcestershire sauce, and Italian seasoning, then bring the mixture to a simmer.
  • Stir in uncooked long-grain rice, salt, and pepper; bring to a gentle simmer, reduce heat to low, cover, and cook for 15-20 minutes until rice is tender and liquid is absorbed.
  • Preheat oven to 375°F (190°C), and transfer the rice and beef mixture to a 9x13-inch baking dish.
  • Evenly sprinkle the shredded cheddar cheese over the casserole.
  • Bake for 15-20 minutes until the cheese is melted, bubbly, and lightly golden.
  • Remove from the oven and let rest for 5 minutes before serving.

Notes

For extra flavor, you can sauté some bell peppers along with the onions. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently.
