Classic Cheeseburger Eggrolls

These Classic Cheeseburger Eggrolls offer a fun and crispy twist on a beloved classic. Filled with seasoned ground beef, melted cheese, and tangy pickles, they make a perfect appetizer or meal!

Ingredients
  

Eggrolls

  • 1 lb ground beef (80/20 for best flavor)
  • 1 tablespoon olive oil
  • 1/2 cup finely diced yellow onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup finely chopped dill pickles
  • 12-14 eggroll wrappers
  • 2 tablespoons all-purpose flour
  • 4 tablespoons water
  • Vegetable oil, for frying (or cooking spray for baking)

Instructions
 

Cook the Beef Base

  • Heat olive oil in a large skillet over medium-high heat, then add ground beef and diced onion, breaking up the beef.
  • Cook for 7-8 minutes until the beef is browned and onion is softened, then drain excess grease.

Season the Beef

  • Return skillet to medium heat and stir in garlic powder, onion powder, salt, and black pepper.
  • Cook for one minute, stirring, to allow the spices to bloom.

Prepare the Filling

  • Remove from heat and stir in shredded cheddar, Monterey Jack, and chopped dill pickles until the cheese begins to melt.

Prepare the Wrappers

  • Whisk together flour and water in a small bowl to create a slurry for sealing the eggrolls.

Assemble the Eggrolls

  • Lay an eggroll wrapper with a corner pointing towards you, place 2-3 tablespoons of filling below the center, and fold the bottom corner up and tuck it in.
  • Fold in the left and right corners, then roll the wrapper tightly towards the top corner, brushing with slurry to seal.

Cook the Eggrolls (Frying Method)

  • For frying, pour vegetable oil 2-3 inches deep into a large heavy-bottomed pot and heat to 350°F (175°C).
  • Carefully fry 3-4 eggrolls for 3-5 minutes, turning until golden brown and crispy, then drain on a wire rack.

Cook the Eggrolls (Baking Method)

  • For baking, preheat oven to 400°F (200°C), lightly spray a baking sheet, and arrange eggrolls in a single layer.
  • Lightly spray the tops of eggrolls, then bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.

Notes

For extra flavor, consider serving these eggrolls with a side of "special sauce" made from ketchup, mayonnaise, and a dash of hot sauce. You can prepare the beef and onion mixture ahead of time and refrigerate it to save on prep time later.
