Ingredients
  

Popcorn

  • 1/2 cup unpopped popcorn kernels
  • 2 tablespoons coconut oil or your preferred popping oil
  • 1/2 teaspoon salt or to taste

Cauldron Coating

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Food coloring black, purple, or orange for a "cauldron" effect
  • cayenne pepper for a subtle warmth

Optional Mix-ins

  • 1 cup mini pretzels
  • 1/2 cup candy corn
  • 1/4 cup Halloween-themed sprinkles
  • 1/2 cup chocolate chips or candy melts

Instructions
 

Pop the Popcorn

  • Heat coconut oil in a large pot on medium-high heat, adding a few kernels to test. Once popped, add the remaining kernels and cover, shaking until popping slows; then remove from heat. Transfer popcorn to a large bowl, discard unpopped kernels, and lightly season with salt.
  • Combine sugar, corn syrup, and butter in a saucepan over medium heat, stirring until dissolved. Bring to a boil without stirring, then continue boiling for 5 minutes or until 250°F (121°C). Remove from heat, then stir in vanilla, baking soda, and optional food coloring or cayenne pepper; the mixture will foam.

Combine and Coat

  • Pour the hot coating over the popcorn, quickly folding to evenly coat. If using, add pretzels and gently incorporate.

Cool and Finish

  • Spread the coated popcorn onto a parchment-lined baking sheet. If adding chocolate or candy melts, sprinkle them on and let them melt slightly before gently spreading; add sprinkles now if desired. Allow the popcorn to cool completely (30-60 minutes) until crunchy, then break into pieces.

Notes

For an extra spooky touch, use black or purple food coloring in the coating. Ensure you work quickly when coating the popcorn, as the mixture sets fast. Store leftovers in an airtight container at room temperature for up to 3-4 days.
