  • 1 lb ground beef 80/20 lean is perfect for flavor
  • 1 medium onion chopped
  • 1 (15 oz) can diced tomatoes undrained
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) can kidney beans rinsed and drained
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese plus more for topping if desired
  • 1 cup cooked elbow macaroni or similar small pasta shape
  • 1 tsp chili powder adjust to your spice preference
  • ½ tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley chopped, for garnish

Cooking Steps

  • Brown the ground beef and chopped onion in a large skillet over medium heat until cooked through. Drain any excess grease.
  • Stir in the diced tomatoes (undrained), tomato sauce, rinsed kidney beans, condensed cream of mushroom soup, chili powder, and garlic powder. Mix well.
  • Fold in the cooked elbow macaroni and 1 cup of shredded cheddar cheese, ensuring even distribution.
  • Pour the mixture into a 9x13 inch baking dish and spread evenly.
  • Cover with aluminum foil and bake in a preheated oven at 375°F (190°C) for 20 minutes.
  • Remove foil, sprinkle with additional cheddar cheese (if desired), and bake for another 5-10 minutes until melted and bubbly.
  • Let the casserole rest for a few minutes, then garnish with fresh parsley and serve.

Notes

This casserole is perfect for a comforting family meal. You can easily adjust the spice level by adding more or less chili powder. For a richer flavor, consider using fire-roasted diced tomatoes.
