  • 1 lb lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2-3 garlic cloves, minced
  • Salt and black pepper to taste
  • 2 cups cooked white rice or mashed potatoes
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1 cup frozen peas and carrots blend
  • Shredded cheddar cheese for topping
  • Fresh chives chopped, for topping (optional)

  • Heat olive oil in a large skillet or Dutch oven over medium heat, then add chopped onion and cook until softened.
  • Stir in minced garlic and cook for one minute; then add ground beef, breaking it up, and cook until browned, draining excess grease.
  • Return the beef mixture to the skillet, stir in cream of mushroom soup and milk, and simmer until well combined.
  • Add frozen peas and carrots and cook until heated through.
  • Spoon the ground beef mixture over cooked rice or mashed potatoes.
  • Top with shredded cheddar cheese and optional chopped chives before serving hot.

Notes

For a richer flavor, you can add a splash of Worcestershire sauce to the ground beef mixture.
