Ingredients
  

Sandwich Components

  • 4 slices sturdy bread sourdough, Texas toast, or a good artisan white work best
  • 4 slices provolone, mozzarella, or Fontina cheese
  • 2 tablespoons butter softened

Bruschetta Topping

  • 2 ripe Roma tomatoes diced
  • 1/4 cup fresh basil chopped
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • salt & black pepper To taste

For Serving

  • 1-2 tablespoons balsamic glaze store-bought or homemade

Instructions
 

Bruschetta Preparation

  • In a medium bowl, combine the diced Roma tomatoes, chopped fresh basil, minced garlic, and olive oil.
  • Season with salt and pepper, stir gently, and let the mixture sit to allow the flavors to meld.

Sandwich Assembly

  • Butter one side of all four bread slices, then place two slices butter-side down.
  • Layer cheese on the buttered bread, then spoon the bruschetta mixture over the cheese; drizzle with balsamic glaze if desired.
  • Top with the remaining bread slices, butter-side up, to complete the sandwiches.

Grilling

  • Preheat a non-stick skillet or griddle over medium heat, then carefully place the assembled sandwiches into it.
  • Cook for 3-5 minutes per side until golden brown and crispy, and the cheese is beautifully melted.
  • Transfer to a cutting board, slice in half, and serve immediately.

Notes

For extra flavor, toast the garlic lightly in a pan with some olive oil before adding to the bruschetta mixture. You can also experiment with different types of cheese like Gruyere or cheddar for varied flavor profiles. Serving with a side of tomato soup is highly recommended!
