Ingredients
  

Dry Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract

Preparation

  • In a medium bowl, whisk together the flour, baking powder, and salt, then set aside.
  • In a large bowl, cream together the softened butter and granulated sugar with an electric mixer until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each, then stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet, mixing on low speed until just combined, being careful not to overmix.
  • Divide the dough in half, flatten each into a disk, wrap in plastic, and refrigerate for at least 1 hour to prevent spreading.

Baking

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  • On a lightly floured surface, roll out one disk of chilled dough to ¼-inch thickness and cut out shapes with cookie cutters.
  • Transfer cut cookies to prepared baking sheets, leaving 1 inch between them, and bake for 8-10 minutes until edges are lightly golden.
  • Cool cookies on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Chilling the dough is crucial for the best texture and shape. Do not overbake these cookies, as they will continue to set as they cool. For best results, use good quality vanilla extract.
