  • 6 slices stale bread, cut into 1-inch cubes (or 2 cups hash browns/cooked diced potatoes)
  • 1 cup cooked breakfast meat (e.g., crumbled sausage, chopped bacon, diced ham)
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell peppers (any color)
  • 1 cup shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray or butter for greasing

Preparation

  • Preheat oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Arrange bread cubes or spread hash browns/potatoes evenly in the greased dish.
  • Distribute cooked breakfast meat, onion, and bell peppers over the base layer, then sprinkle with half of the shredded cheddar cheese.

Cooking

  • In a large bowl, whisk together eggs, milk, salt, black pepper, and garlic powder until well combined.
  • Pour the egg mixture over the ingredients in the baking dish, ensuring everything is moistened.
  • Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top of the casserole.
  • Bake for 45-60 minutes, or until the center is set and golden brown.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the egg mixture. This casserole can be assembled the night before and refrigerated, then baked in the morning for a quick breakfast.
