Equipment

  • Blender or Food Processor
  • Steamer or Pot
  • Mixing Bowl
  • Non-stick Pan or Griddle
  • Ladle

Ingredients

Main Ingredients

  • 1 cup Rolled Oats
  • 1 medium-sized (about 150g) Fresh Beetroot peeled and chopped
  • 1 Fresh Ginger inch piece, peeled
  • 1 Green Chili small (adjust to taste)
  • ½ teaspoon Cumin Powder
  • ¼ teaspoon Turmeric Powder
  • ½ teaspoon Salt or to taste
  • ½ cup Water + 2-4 tablespoons (for blending and adjusting consistency)
  • 2-3 tablespoons Oil or Cooking Spray for cooking

Instructions

Preparation

  • Wash, peel, and chop the beetroot into small pieces. Steam or boil until tender, then let it cool slightly.
  • Combine cooked beetroot, rolled oats, ginger, green chili, cumin powder, turmeric powder, salt, and ½ cup of water in a blender.
  • Blend until smooth, adding more water as needed to achieve a pancake batter consistency.
  • Transfer the batter to a bowl, cover, and let it rest for 10-15 minutes to hydrate the oats.

Cooking

  • Heat a non-stick pan or griddle over medium heat and lightly grease it.
  • Pour a ladleful of batter onto the griddle and spread it into a thin, round chilla.
  • Cook for 2-3 minutes until edges are cooked and bubbles appear, then drizzle oil, flip, and cook for another 1-2 minutes until golden.
  • Remove the cooked chilla and repeat the process with the remaining batter, greasing the pan as needed.
  • Serve the Beetroot Oats Chillas immediately.

Notes

For extra flavor, you can add a pinch of asafoetida or finely chopped coriander leaves to the batter. These chillas pair well with a mint chutney or plain yogurt.
