  • 3-4 medium, very ripe bananas
  • 2 cups rolled oats (old-fashioned)
  • 1/2 cup maple syrup (or honey/brown sugar)
  • 1 large egg
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, allowing for an overhang; lightly grease the parchment paper.

Mixing

  • In a large bowl, mash the ripe bananas until mostly smooth, then add the egg, melted butter or coconut oil, maple syrup, and vanilla extract, whisking until well combined.
  • In a separate bowl, combine the rolled oats, baking powder, cinnamon, and salt, ensuring even distribution.
  • Add the dry ingredients to the wet banana mixture and stir with a spatula until just combined, being careful not to overmix.

Baking and Serving

  • Pour the batter into the prepared baking pan and spread it evenly.
  • Bake for 20-25 minutes, or until the edges are golden brown and a toothpick comes out clean.
  • Allow the bars to cool completely in the pan on the parchment paper before lifting them out and slicing into 9-12 bars.

Notes

For extra flavor and texture, consider adding a handful of chocolate chips or chopped nuts to the batter before baking. Ensure bananas are very ripe for optimal sweetness and moisture, as this minimizes the need for additional sweeteners. These bars store well in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
