  • 4 boneless, skinless chicken breasts about 1.5 lbs total
  • 8 ounces cremini mushrooms, sliced
  • 1 large yellow onion, thinly sliced
  • ½ cup balsamic vinegar
  • ½ cup chicken broth
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Cooking Instructions

  • Pat chicken breasts dry and season generously with salt and pepper.
  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat, then sear chicken for 4-6 minutes per side until golden brown; remove and set aside.
  • Add remaining olive oil and butter to the skillet, reduce heat to medium, then sauté onions and mushrooms for 8-10 minutes until softened and browned.
  • Stir in minced garlic and dried thyme, cooking for one minute until fragrant.
  • Pour in balsamic vinegar and chicken broth, bring to a simmer, and scrape up browned bits, reducing for 3-5 minutes until sauce slightly thickens.
  • Return chicken to the skillet, nesting it in the sauce with vegetables, then cover and simmer on low for 5-8 minutes until chicken is cooked through.
  • If a thicker sauce is desired, remove chicken and simmer the sauce uncovered for a few more minutes.
  • Garnish with fresh parsley if desired before serving.

Notes

For an extra touch of flavor, you can add a splash of red wine along with the balsamic vinegar and chicken broth. Make sure the internal temperature of the chicken reaches 165°F (74°C) for safe consumption.
