  • 1 pound breakfast sausage (or turkey sausage for a leaner option)
  • 1 cup bell peppers chopped (any color)
  • 1/2 cup onion chopped
  • 10 large eggs
  • 1/2 cup milk (dairy or non-dairy)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1 cup cooked hash browns or cubed potatoes

  • Fresh parsley
  • chives, or hot sauce

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, cook the breakfast sausage over medium heat until browned, then drain excess fat. Add bell peppers and onion, cooking until softened (5-7 minutes).

Assembly

  • Whisk together eggs, milk, salt, and pepper in a large bowl.
  • Spread cooked hash browns or cubed potatoes evenly in the greased baking dish.
  • Layer the cooked sausage, peppers, and onions over potatoes, then sprinkle with half of the shredded cheese.
  • Pour the egg mixture over the ingredients in the dish and top with the remaining shredded cheese.

Baking and Serving

  • Bake for 30-35 minutes until set, golden brown, and a knife inserted in the center comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving for cleaner cuts.

Notes

For meal prep, you can assemble the casserole the night before and bake it in the morning. Adjust cooking time for refrigerated casserole if needed.
