Classic Baked Cranberry Brie Bites

  • 1 sheet or can Puff Pastry or Crescent Roll Dough
  • 4-6 ounces Brie Cheese rind on, cut into small cubes
  • 1/4-1/2 cup Cranberry Sauce whole berry or jellied

Optional Garnish

  • Fresh rosemary sprigs
  • chopped pecans

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and unroll the puff pastry dough onto a lightly floured surface or parchment paper.
  • Cut the dough into 12-16 equal 2x2 inch squares using a knife or pizza cutter and place each square into the cups of a mini muffin tin.
  • Place a small cube of brie cheese in the center of each dough square, then top the brie with about a teaspoon of cranberry sauce.

Baking

  • Bring the corners of the dough up around the filling, gently pinching them together to form a small cup or package.
  • Bake for 12-15 minutes, or until the pastry is golden brown and the brie cheese is melted and bubbly.
  • Allow the bites to cool in the muffin tin for a few minutes before removing, and garnish with fresh rosemary or chopped pecans if desired.

Notes

For best results, make sure your brie is cold before cubing to prevent it from becoming too soft to handle. If you don't have a mini muffin tin, you can try using a regular muffin tin, but you'll need to adjust the dough square size and baking time accordingly. These bites are best served warm but can also be enjoyed at room temperature.
