  • 1 box Spice Cake Mix standard size
  • 1 cup Water or milk substitute for richness

  • Preheat oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
  • In a large bowl, combine the spice cake mix, pumpkin puree, and water.
  • Mix until just combined with a spatula or on low speed, being careful not to overmix.
  • Pour the batter evenly into the prepared baking pan.
  • Bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool completely in the pan on a wire rack before slicing.

Notes

Ensure you use pumpkin puree, not pumpkin pie filling. For a richer cake, substitute milk for water. Be careful not to overmix the batter; a few lumps are fine.
