  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sesame seeds

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, and salt.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Place the sesame seeds in a shallow dish.
  • Roll spoonfuls of dough into balls, then roll each ball in the sesame seeds to coat completely.
  • Arrange the coated dough balls on the prepared baking sheet, leaving some space between them.

Baking

  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are still soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, lightly toast the sesame seeds before coating the cookies. Store cookies in an airtight container at room temperature for up to 3-4 days.
