  • 0.5 lb ground beef (or ground turkey/plant-based crumble)
  • 0.5 packet taco seasoning (or 1 tbsp homemade blend like chili powder, cumin, paprika, garlic powder, onion powder, oregano)
  • 0.25 cup ranch dressing
  • 2 tbsp corn and black bean salsa
  • 24 wonton wrappers
  • 1 cup shredded cheddar or Monterey Jack cheese

  • hot sauce
  • fresh cilantro

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and lightly spray a mini muffin tin with cooking spray.
  • Press one wonton wrapper into each cup of the mini muffin tin, gently shaping it to fit.

Cooking

  • Brown the ground beef in a skillet over medium heat, breaking it apart, then drain any excess fat.
  • Stir in half a packet of taco seasoning with the cooked ground beef and cook for 1-2 minutes until fragrant.
  • Bake the empty wonton cups for 5-7 minutes until lightly golden and slightly crispy.
  • In a bowl, combine the cooked taco meat with ranch dressing and corn and black bean salsa, mixing well.
  • Fill each crispy wonton cup with approximately one tablespoon of the taco-ranch mixture.
  • Top each filled cup with a sprinkle of shredded cheese.
  • Return the filled wonton cups to the oven and bake for another 3-5 minutes, or until the cheese is melted and bubbly.

Serving

  • Carefully remove the cups from the muffin tin and garnish with diced avocado, hot sauce, or fresh cilantro if desired, then serve warm.
