Cheesy Potato Topped Ground Beef Casserole

Ingredients
  

Ground Beef Mixture

  • 1 tbsp olive oil
  • 1.5 lbs ground beef 80/20 recommended
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp onion powder
  • 1 can cream of mushroom soup 10.5 oz
  • 0.5 cup beef broth
  • 0.5 cup sour cream

Topping & Garnish

  • 2 lbs Russet or Yukon Gold potatoes about 4 large, peeled and thinly sliced or diced
  • 2 cups shredded cheddar cheese
  • 0.25 cup fresh parsley chopped for garnish, optional

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Cook the Beef Mixture

  • Heat olive oil in a large skillet and cook the ground beef until no longer pink, then drain excess fat.
  • Add chopped onion to the beef and cook until softened, then stir in minced garlic, salt, pepper, paprika, and onion powder for one minute.
  • Stir in cream of mushroom soup, beef broth, and sour cream until combined and heated through, then remove from heat.

Assemble Casserole

  • Spread half of the ground beef mixture in the prepared baking dish.
  • Layer half of the sliced or diced potatoes over the beef, then sprinkle with 1 cup of cheddar cheese.
  • Spoon the remaining ground beef mixture over the cheese.
  • Top with the remaining potatoes in an even layer.
  • Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.

Bake and Serve

  • Cover the baking dish tightly with aluminum foil and bake for 45 minutes to 1 hour, or until potatoes are tender.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  • Let the casserole rest for 5-10 minutes before serving, and garnish with fresh parsley if desired.

Notes

For crisper potatoes, consider par-boiling them for 5-7 minutes before assembling the casserole.
