  • 4 large bell peppers
  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • 1 medium onion
  • 2 cloves garlic
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1/2 cup milk or beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked rice
  • Salt and freshly ground black pepper to taste

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Place halved bell peppers cut-side up in a baking dish; par-baking for 10-15 minutes is optional.

Cooking

  • Heat olive oil in a large skillet over medium-high heat, then brown the ground beef, crumbling it until fully cooked. Drain excess fat.
  • Add diced onion and minced garlic to the skillet, cooking for 5-7 minutes until softened and translucent.
  • Stir in the dry ranch seasoning mix for 1 minute, then add milk or beef broth to form a sauce.
  • Remove from heat and stir in 1/2 cup shredded cheddar cheese and cooked rice (if using) until melted and combined. Season with salt and pepper.
  • Evenly divide the mixture among the bell pepper halves in the baking dish.
  • Cover loosely with foil and bake for 20 minutes.
  • Remove foil, sprinkle with the remaining 1/2 cup cheddar cheese, and bake uncovered for another 10-15 minutes until bubbly and peppers are tender.
  • Garnish with fresh chives or green onions if desired, and serve hot.

Notes

For a richer flavor, use beef broth instead of milk. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
