  • 1 green bell pepper finely diced
  • 2 cloves garlic minced
  • 1 can tomato sauce (15-ounce)
  • 1 tablespoon Cajun seasoning adjust to your spice preference
  • 1 teaspoon brown sugar
  • 0.5 teaspoon smoked paprika
  • 0.25 cup chicken broth
  • Salt and black pepper to taste
  • 6 hamburger buns preferably toasted

Cooking Steps

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Sauté diced onion and green bell pepper for 5-7 minutes until softened, then stir in minced garlic and cook for one more minute.
  • Add ground chicken to the skillet, breaking it apart, and cook for 5-8 minutes until browned. Drain any excess fat.
  • Stir in tomato sauce, Cajun seasoning, brown sugar, smoked paprika, and chicken broth, then bring the mixture to a simmer.
  • Reduce heat to low, cover, and simmer for 10-30 minutes, stirring occasionally. Adjust seasoning with salt and pepper until the sauce is thick.
  • Spoon the warm Cajun chicken mixture onto toasted hamburger buns. Serve immediately with optional toppings like pickles, shredded lettuce, or hot sauce.

Notes

For an extra kick, add a pinch of cayenne pepper with the Cajun seasoning. If the mixture gets too thick, add a splash more chicken broth to achieve desired consistency. Serve with a side of coleslaw or potato salad for a complete meal.
