Ingredients
  

Muffins

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 tablespoons poppy seeds
  • 1 large egg
  • ¾ cup milk any kind works
  • cup unsalted butter melted
  • 1 tablespoon lemon zest from about 1 large lemon
  • 2 tablespoons fresh lemon juice

Optional Glaze

  • ½ cup powdered sugar
  • 1-2 tablespoons fresh lemon juice

Instructions
 

Preheat & Prep

  • Preheat oven to 400°F (200°C) and line a 12-cup muffin tin with paper liners.

Combine Dry Ingredients

  • In a large bowl, whisk together flour, granulated sugar, baking powder, salt, and poppy seeds until no lumps remain.

Combine Wet Ingredients

  • In a separate medium bowl, whisk the egg until light and frothy, then stir in milk, melted butter, lemon zest, and lemon juice until well combined.

Marry the Mixtures

  • Pour the wet ingredients into the dry ingredients.

Mix Gently

  • Using a spatula or wooden spoon, mix until just combined; avoid overmixing to prevent tough muffins.

Fill Muffin Cups

  • Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full.

Initial High Heat Bake

  • Bake at 400°F (200°C) for 5 minutes to help create a domed top.

Reduce Heat & Continue

  • Reduce oven temperature to 375°F (190°C) and continue baking for 13-16 minutes, or until a wooden skewer inserted into the center comes out clean.

Cool

  • Cool muffins in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Glaze (Optional)

  • While muffins cool, whisk powdered sugar and lemon juice in a small bowl until smooth for the glaze, then drizzle over cooled muffins.

Notes

For extra lemon flavor, add some additional lemon zest to the dry ingredients. Ensure all wet ingredients are at room temperature for better incorporation into the batter.
