Bourbon Pecan Pie with a Twist

Ingredients
  

For the Pie Crust

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, very cold and cut into small cubes (1 stick)
  • ¼ cup ice water (or a bit more, as needed)

For the Pecan Filling

  • ¾ cup light corn syrup
  • ¼ cup pure maple syrup
  • ½ cup packed light brown sugar
  • 4 large eggs
  • ¼ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1-2 tablespoons good quality bourbon
  • 1 ½ cups pecan halves (fresh and not bitter)
  • ½ cup semi-sweet chocolate chips (optional, for Chocolate Bourbon Pecan Pie)

Instructions
 

Prepare the Pie Crust

  • Whisk flour and salt together, then cut in cold butter until crumbly. Gradually add ice water and mix until the dough forms a disc; refrigerate for 30 minutes.

Preheat Oven & Roll Dough

  • Preheat oven to 375°F (190°C). Roll out chilled dough into a 12-inch circle and transfer to a 9-inch pie plate. Trim, crimp edges, and optionally blind bake for 10-15 minutes.

Make the Filling

  • In a large bowl, whisk together corn syrup, maple syrup, brown sugar, eggs, melted butter, vanilla extract, salt, and bourbon until smooth.

Assemble the Pie

  • Pour the filling into the prepared pie crust. Evenly arrange pecan halves over the filling, and sprinkle with chocolate chips if using.

Bake the Pie

  • Place the pie on a baking sheet and bake for 40-50 minutes at 375°F (190°C), until the center is just set. Cover edges with foil if browning too quickly.

Cool Completely

  • Cool the pie completely on a wire rack for at least 2-3 hours before slicing to allow the filling to set.

Notes

For best results, ensure all pie crust ingredients are very cold. If the filling appears too loose after baking, it may need a few extra minutes in the oven. The chocolate chips are truly optional but add a wonderful depth of flavor.
