Ingredients
  

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil

For the Sauce

  • 1/2 cup bourbon
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon honey
  • 1 tablespoon ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 teaspoon red pepper flakes optional

For Serving

  • cooked rice
  • sesame seeds optional
  • sliced green onions optional

Instructions
 

Prepare the Chicken

  • Cut chicken thighs into 1-inch pieces and toss with cornstarch.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Add chicken and cook until browned and cooked through, then remove.
  • Carefully wipe excess oil from the skillet.

Make the Sauce

  • Whisk together all sauce ingredients in a bowl.
  • Pour the sauce into the skillet and bring to a simmer, stirring constantly.
  • Simmer for 3-5 minutes until the sauce thickens.

Combine and Serve

  • Return the cooked chicken to the skillet and toss to coat.
  • Serve immediately over rice, garnished with sesame seeds and green onions if desired.

Notes

For a spicier kick, increase the red pepper flakes. Adjust brown sugar and honey to your sweetness preference. Serve with your favorite steamed vegetables for a complete meal.
