  • 1 cup black beans Rinse if using canned beans.
  • 1 cup rice
  • 1 pound sausage (such as Andouille or chorizo)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • 2 cups chicken or vegetable broth

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion, garlic, and bell pepper, and sauté until soft.
  • Add sausage and cook until browned.
  • Stir in cumin and paprika, and cook for another minute.
  • Add black beans, rice, and broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for about 20 minutes or until rice is cooked.
  • Season with salt and pepper, and serve warm.

Notes

Serve warm, with optional toppings like fresh cilantro, avocado, or a squeeze of lime juice. Pairs well with a side salad or warm bread. For extra flavor, consider adding chopped tomatoes or corn. For heat, add diced jalapeños or hot sauce.
