  • 2 cups long-grain white rice (Basmati or Jasmine)
  • 3 ½ cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • ½ small onion finely diced
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • lemon zest Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¼ cup fresh parsley chopped
  • Salt and black pepper to taste

  • Heat olive oil in a medium saucepan, then sauté diced onion for 3-5 minutes until softened. Stir in minced garlic, oregano, and thyme, cooking for another minute until fragrant.
  • Rinse rice under cold water until clear, then add it to the saucepan and stir to coat with aromatics. Pour in the vegetable or chicken broth.
  • Bring the mixture to a boil, then reduce heat to low, cover tightly, and simmer for 15-18 minutes until liquid is absorbed and rice is tender. Do not lift the lid.
  • Remove the saucepan from heat and let it rest, still covered, for 5 minutes to ensure fluffy rice.
  • Fluff the rice with a fork, then stir in lemon zest, fresh lemon juice, and chopped parsley. Season with salt and pepper to taste before serving.

Notes

For best results, use a heavy-bottomed saucepan to prevent sticking. You can adjust the amount of lemon juice and zest to your preference.
