  • 1.5 cups Heavy Cream or Whipping Cream, chilled
  • 0.25 cup Granulated Sugar adjusted to taste
  • 1 teaspoon Unflavored Gelatin Powder
  • 2 tablespoons Cold Water
  • 0.5 teaspoon Vanilla Extract optional

Preparation

  • Puree hulled and quartered strawberries in a food processor or blender until smooth.
  • Transfer the puree to a bowl and stir in granulated sugar, adjusting to your taste, and vanilla extract if using.
  • Sprinkle gelatin powder over cold water in a microwave-safe bowl and let it bloom for 2-3 minutes.
  • Microwave the bloomed gelatin for 10-15 seconds until liquid and clear.
  • Slowly whisk the dissolved gelatin into the strawberry puree until thoroughly combined and lump-free.
  • In a separate chilled bowl, beat heavy cream with an electric mixer until soft peaks form, being careful not to overbeat.
  • Gently fold the strawberry puree mixture into the whipped cream using a rubber spatula to preserve airiness.
  • Spoon the mousse into serving glasses or a bowl and chill for at least 15-20 minutes to set, or 1-2 hours for a firmer mousse.

Notes

For best results, ensure your heavy cream is very cold before whipping. Adjust the sugar level to your preference based on the sweetness of your strawberries. For a beautiful presentation, garnish with fresh mint leaves or extra strawberry slices.
