Ingredients
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
½ cup milk
Green food coloring
2 cups powdered sugar
½ cup unsalted butter, softened (for frosting)
1 tsp vanilla extract (for frosting)
1–2 tbsp milk (for frosting)
Edible googly eyes
Sprinkles (optional)
Instructions
1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a large bowl, cream together ½ cup softened butter and granulated sugar until light and fluffy.
4. Beat in eggs one at a time, then stir in 1 tsp vanilla extract.
5. Gradually add dry ingredients to wet ingredients, alternating with ½ cup milk, beginning and ending with dry ingredients. Mix until just combined.
6. Fill cupcake liners about two-thirds full. Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely on a wire rack.
7. For the frosting: In a large bowl, beat ½ cup softened butter until creamy. Gradually add powdered sugar, mixing until smooth. Stir in 1 tsp vanilla extract and 1–2 tbsp milk until desired consistency is reached. Tint with green food coloring to a vibrant monster green.
8. Pipe or spread frosting generously onto cooled cupcakes. Immediately decorate with edible googly eyes and sprinkles to create your Monster Cupcakes!
Notes
For extra monstrous flair, try different shades of green or even purple and orange frosting.
Monster Cupcakes are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 2 days.
